Hot and Fast Baby Back Ribs

So i decided to do some ribs today and went the hot and fast route because i didnt want to wait until 11pm for them to finish.

So smoked between 270-305 and they were done in 2 hr 40 mins. Came out great. Tender, juicy and great bark. I thought they would take longer tbh.

No difference at all actually. they may have been the best ribs i have done. I probably slightly over cooked them because when i checked them at the 2 hr 30 mark i was surprised to see that they were almost done so i added sauce and let them go for another 10 mins before taking them off.

I have been doing hot and fast for a while, cook way quicker and end product is just as good.

Loinbacks? I've done those hot n fast with good results. Tried STL and they didn't seem to render out enough fat for me.

Yea i went to sauce the one rack and when i accidentally pulled that bone clean out i said HFS these are done! Hot and fast it is going forward! Before i did them i did a search and it didnt seem that many people did baby backs hot and fast so i was a little nervous!

Did baby back ribs today at 300 degrees came out great took a little over 3 hrs no more low and slow for me
