Tonight's dinner; pork loin roast injected with Game Changer brine and rubbed with Dominator Sweet Rib rub. Cooked indirect on a Weber kettle with RO lump and two pecan chunks. Sorry about the CCP (crappy cellphone pics)...

Have not one clue why I don't do waaaaay more of these. I can get loin way cheaper than pork butt and I have some game changer brine. Man I'm slack!

I got the blade from Chef Knives To Go. It's a Konosuke HD 240mm Wa-gyuto with a custom Ebony handle and natural blonde buffalo horn ferrule. They have since updated the line so this is the closest analog currently available...

I agree, the crust looks great. I love me some some caramelized sugar bark. What temp did you cook it at?
