Chicken breast 3 ways-my plan

First post in a long while. Been so busy at the restaurant. Going to smoke some chicken breast tomorrow to have on hand. Freezer stock getting low. I have 12 pounds of chicken breast to smoke. Broke it down to 3 flavor profiles. The first is the chicken marinading in olive oil with fresh rosemary,thyme and sage. 2nd is my Mexican rub in oil, and 3rd is sesame oil and Chinese rub. Plan on smoking them tomorrow on the Shirley using cherry splits.
Will update tomorrow. Any thoughts?

I think I'll need to test them all. Really liking the sound of the Mexican and Sesame versions. Waiting for more pron.

Good luck, miss the pics you showed of the desserts you would make but certainly understand what with a new job and all.
