Well it's Sunday and I need to get ready to cook for a pot luck on the 31st. So onto the smoker goes a decent rack of St. Louis Spares with BPS Sweet Money rub.

I'm using my Southern Pride SP-1000 for this cook. Some may think that's crazy, but this thing is very efficient and around the same amount of wood as my Lang 36 does to run 275-290 degrees. I get it fired up using the propane system and then flip the comp switch I installed to switch over to 100% wood. Runs like a freakin top and settles in around 275-290 degrees. I put in some big white oak logs because it was cold this morning and now I'm adding some hickory and cherry to it for flavor. This convection smoker cooks fast, so the ribs will be done in about 2.5 hours. I was actually trying to run around 230 degrees today but I put too much wood in when I started it up.

They are. I'll add some friends on Friday. It blows my mind every time I open the doors on this thing just how much it will hold. I normally use my Ole Hickory CTO, but the SP wasn't getting much love so I figured why not. :)
 
Make that 90 minute ribs. They are nearly done at 1:05, so I wrapped them with 15-20 minutes to go with some apple juice, rub, butter and brown sugar.
 
The ribs came out really good with a total cook time of less than two hours. Moist, perfect bite with just enough smoke.

I went with Kinder's Mustard sauce and they were tasty.

lonely looking rack of ribs in that big old smoker but they look like they turned out nice.
 
that is so cool. you fired up that monster for one lonely rack. your my hero. love it. ribs look pretty good buddy.
 
haha. Thanks. It may be a monster but it's pretty dang frugal on fuel so it's really not breaking the bank to run the thing with a small load. I'm going to cook more BBQ later this week and I should be able to at least fill up most of one of the 12 racks. haha. :)
