I smoked some big ol' beef chuckies a month or two ago and froze the leftovers. The good thing about doing so is that I can plop a bag into some simmering water and have BBQ at a fairly short notice.

While sitting at home today I decided to warm up a short rib and pull it apart and make myself a sandwich. I took a brioche bun and toasted it, put some thinly sliced onions and pickles on the bottom bun, top it with the pulled rib meat and then put some BBQ sauce on the top bun. Assemble. Smush. Cut. Eat.

It was good stuff. Now I am full and in seriousness need of a nap.
