Pancetta made of pork belly. Capocollo is made with the "money" muscle. It's the muscle that runs from the neck over the shoulder and eventually to the loin. Since you are getting it off a pork butt, you will just get the part that runs over the shoulder (that's just the way hogs are broken down in America).
The "money" muscle is opposite the bone end of the butt. It is cylindrical. Probably want to google it for a picture if you are having trouble finding it.
