Up at 3:30 this AM and had the brisket on at 4:30. Fell back asleep for an hour and the temp went up to 325. Because of this I decided to let it ride Bludawg style and see what would happen. Wrapped it at 4 hours and pulled it probed nice in the flat at 7 hours. Pulled it and let it rest for an hour and the took the ends to do burnt ends. I need to get some pics of the ends when they are done. How long do you leave the ends back on the smoker???

It is resting for a couple hours before everyone gets here! Happy 4th!

I usually slice the point but if in the mood for candy I've let them go for about 30-60 minutes until the sauce is tacky and the cubes are soft.
 
Real purty brisket and ribs!

They loved it! I even had one guest say the ribs were the best they ever had! I'll take that as a win.
