This one's from awhile back.....didn't rest 'em as long as I do nowadays.....they were slightly drier, sooner than normal...........I love my kettles.........

One definition of trust, for me, is 5 kettles running all nite long on 1 & 1/4 bag of Stubb's &
1/4 bag of Wicked lump & all that was needed was a chimney of lump distributed across the 5 @ 7:30 the next AM.....

I don't really feel comfortably in the groove 'till about 4 of them are going....then the "Zone" happens & it's all about the kettles & staying in tune mentally.....
 
Feeding a small army? Either way, someone was happy...
 
The cook looks great!
I was impressed with the 'Buy one, Get On Free' deal til I noticed $12.49/lb.
That's some expensive pork butts... even at half price.

NEVERMIND... heh, heh. I did the math and realize it's $2.49/lb.
That IS a good deal.

USMC, Barq's is the goods....there's a few hi-dollar fancy ones that are pretty good, but it rocks for reasonable, as they say.....
Yep, cholloway....that's kinda what got this cook going as big as it ended up.....tried some, went good & the sale was extended, so I just kept buying packs as i had spare cash & ended up with more than I could freeze or fridge.... START COOKIN' !!!!

The wife's oldest daughter was coming from Australia, a birthday for Dad & brother & it was on................
