Got a decent tomahawk. Not the greatest marbling, but not horrible either. I know you guys have seen the reverse sear a million times but it doesn't get old does it?
Kosher salt for the dry brine x about 2 hours
Onto the kettle it goes. We ran a little hotter than I really like (275 instead of 225) since there was a bit of a time crunch, but it still counts.
Got it to just shy of 120, and took it inside for some clarified butter love
I had fresh coals warmed up in the bullpen, so time to sear.
Pretty nice looking steak. Shoulda taken. pic once it had some love on it to make it glisten.
Solid med rare, but not wall-to-wall med rare because I was cooking it hotter than a true reverse sear likes to be. Still, I choked it down pretty easy!
