Not sure anyone else does this, but when I smoke a chicken I throw the left over bones, skin, fat, gristle, wing tips, etc into a bag and freeze it, along with the neck and what not left in the cavity. Then when the mood strikes me, I put it all in a pot with onions, carrots, sage, garlic, S&P, celery and water and boil it for a few hours.

This time I made smoked chicken tortilla soup. Just add black beans, corn, diced tomatoes, cilantro and jalapenos to it.
