Smoke Roasted Tomatoes and Pasta Sauce

Homegrown tomatoes, sweet peppers, onion, garlic, basil.
Great time to make some pasta/spaghetti sauce.
Smoke roast the tomatoes, onions and sweet peppers over red oak.
Add spices for sauce, simmer, then can.
