somebody shut me the fark up.
There’s a ground meat TD happening. This is what I made.
Scotch Eggs, using Duck Eggs and ground lamb.
Boiled the eggs for 5 minutes (should’ve gone 4)
Tossed them in ice bath and then peeled when cook
Ground lamb
Rolled it flat
Cut into sections
Seasoned with Lamb Rub
Set the peeled eggs in place
Rolled them up and a little more seasoning
Smoked in the Shirley

Served with stone ground and Dijon mustards
