I am just learning brisket too, and I've cooked a few dozen. I agree with the slow cooking because of low temp will tend to dry it out. I'm not sure if this actually helps but on some briskets I will add a couple cup of beef broth or stock when wrapping. I've cooked without doing this and have had good results, so who knows. Keep at it. The elusive perfect brisket is fun to shoot for.
