Sorry but I don't watch Youtube unless my truck is broken. As for leftover pork or chicken, I vac seal and freeze in 1lb portions. I have tons of recipes that call for 1lb of meat, like my baked beans for a pork example, or nachos as a chicken example, and many more. Nothing worse than craving a dish and not having available meat. Just a thought.
 
I made quesadillas tonight.
Some with leftover brisket and roasted chiles.
Some with leftover wing meat treated with wing sauce and blue cheese.
All had cheddar.
