French Dip Sammich!

Hey Folks,

So the sandwich TD got me hungry. So I figured I'd make some smoked french dip sammies. Picked up a eye of round from Winco and coated it with some Oakridge Santa Maria rub and cooked it indirect in the kettle over mesquite lump and oak chunks to an IT of 122. I stuck it in the fridge for a day to make it easier to slice. Made a few homemade french rolls and built with some sauteed onions, horseradish and some melted provolone cheese served with Au Jus. Thanks. The bread was out of necessity really. The only other bread I had in the house was cheap sliced wheat. And I just couldn’t do that.

Anyone have tips on exactly which beef roasts are good for this? They was an eye round right? Would a top round also work or is eye the goto?
