I'm thinking easy assembly after the cook. Maybe a smoked chicken and sausage gumbo?

Smoked shrimp and oysters with peppers and onions? Or maybe dirty rice?

Something you can just ladle up into a serving dish or cup of some sort.

Like the idea but it’s still too hot for gumbo. It has to at least get below 90 down here lol
 
Pork Steaks. They're done quick, can hold them on the grill forever in a pan of bbq sauce. Can be served on slider buns, with a pickle slice and a dollop of coleslaw. Not as fancy as the other suggestions, but not as expensive either.
