Fired up my Royale Fab direct heat cooker and did a bone in pork loin, some cheesy jalapeño hominy and a few links of my “Lockhart sausages” to start the new year
Injected the loin with some Tony C’s Jalapeño Butter and hit it with some Stanley’s All Purpose Rub and Black Pepper - took about 90 minutes over direct heat
Also made a half pan of cheesy jalapeño hominy
And rounded out the meal with a few links of some sausage I made earlier in the weekend
