BBQ Lamb Shank with Pomegranate Sauce.

Trimmed a Couple of Shanks ready for Smoking.
Got happy with nothing but Salt and Oil.

Onto the Acorn for a few hours using Charcoal and Fruitree wood Chips.

Into the Cast iron pot with some home made Stock.

Back into the Acorn for 3.5 hours

Put the Shanks aside to rest while adding the Stock to a few cups of Pomegranate Juice.

reduced for an hour ,added some Butter to silken it and some lentils.

Served on a bed of Mashed spuds,sprinkle of Spring onion cause she wanted salad.

We enjoyed this, the lentils added an extra depth to the dish.
Nutty and very filling.
It is Cold and wet here. This was a real Tummy Warmer.

I've yet to do lamb on the Primo, you may have just pushed me over the edge. Great meal!!!

That's an affordable cut where I live. Can it be cooked without braising? Looks like art.


It can but it tends to be a tad chewy, makes great beer food.
Braising creates sauces that go very well with them.
You could smoke then wrap in foil, Maybe wrap in bacon first?or a blob of Butter
