While perusing recipes for the Cookbook Inspired Throwdown, I pulled out my very dusty and nearly forgotten copy of Steven Raichlen’s BBQ Bible, which I hadn’t cooked from since probably around 2007:

I liked the story he tells about the sea captain, so I decided to give it a whirl! However, I adapted it for traditional chicken Tikka on skewers, using boneless thigh meat.

Chicken thigh meat cut up into chunks:

Marinade ingredients(I added garam masala and paprika for added depth of flavor, and left out the food coloring):

After the chicken marinated for about 6 hours, I threaded the chicken onto the skewers:

Then fired up the kettle for super hot indirect:
