Cooked this monster for an 1 1/2 on smoke at 250. Then turned it up to 650 on seer using the fire pot for two minutes each side each side. Topped it off with parsley, butter, garlic and salt. Flavor beyond description, like eating meat sushi.

Looks good, that's some impressive marbling
 
Outstanding looking steak! I’m generally pretty comfortable with cooking them but I’m not sure I wouldn’t be intimidated with something like that — would hate to screw it up.
