Really good looking cooks especially the brisket! Did you go fat cap up after wrapping?
 
No I didn't. I kept it fat cap down. I never tried fat up. Will that make a difference? I will try it next cook.

To me the flat stays a little more tender. The bark still comes out ok but I flip it back fat cap down during the hold.
 
Good god, how many people were you feeding?
I make three pizza every Friday for three of us and I have pizza for breakfast and lunch on Saturday and the wife and kid have some for lunch on the weekend also.

I think for the brisket and rack of ribs there was like 12 of us and I have some left over brisket for the week.
