As I posted yesterday I’m smoking a pork butt and a brisket
Woke up at dawn and put the fireboard thermometer proper in the front of the grill
For 5 hours it has been about 30* warmer than the dome thermometer. This is a huge variance for me.
I opened it up and moved the probe to the rear of the Weber and now the two temps are in sync
Don’t know why but weird.
Also butcher cut the brisket into two parts. For no reason
It was 50* hotter than the butt.
After 5 hours they are also now in sync!
