I’ve been smoking on my Weber performer the last few weeks and was leaving the bottom vent cracked and had to close the top vents a lot to keep it in the smoke range.
When cleaning the grill yesterday I realized that air is coming into the kettle through the gas assist tube. Today I decided to close the bottom vents all the way with the top vent wide open and it held in the 225°-250° range at the grate for hours all on its own.
If you are smoking on a Weber performer with a gas assist try closing the bottom vent completely and see what temp it stabilizes on.
