Just bit the bullet and ordered the following Victorinox: 12-inch Granton Edge Slicing Knife, 8-inch Fillet ands 12-inch honing steel. I do love Amazon.

I'm using some old knives obtained from a packing house. I think it was National Beef. Not sure what brand they are but they've been doing the job.

I'm like jeanie, I got mine from a butcher supply house so many years ago I've forgotten where. They've done many a steer, pig and deer but I sure like the looks of the ones you got. :)
