If you decide not to use it in a gravy or stock, I second the option of giving it to the dog. I smoke up the necks of poultry right along with the bird and then give it to my dogs. It makes them VERY happy. Or, maybe a neighbors dog?
 
Thanks for all the replies. Now the debate... to give to my shorthair or make some stock for gravy???

I'm leaning towards GRAVY.

 
If you are going to use them for stock.... roast them first and roast them for some color. Flavor central. I highly recommend doing this. I roast all my bones before stock making. Chicken, duck, beef, turkey. Huge difference.
