Since you haven't declared Western or Eastern NC BBQ, you are required to do both to please the masses. (Even if it's only a family of 2.) So, you need to make Vinegar and Mayo based slaws, Eastern and Western NC sauces, and chop the pig. Only pull the pig if it's a whole hog and you're letting the eaters pull meat directly from the hog.

This feast will more than likely include:

• Pork Butt
• Pork Picnic
• (can't readily find whole shoulders here, so this is close enough)
• Slaw
• NC BBQ sauce (dip)

I'm a coarse chopped kinda guy, I prefer it over minced

I prefer to not chop it at all. Just pull it off and pile on a sammich. My family prefers a rough chop. I prefer either over the minced style though.

I don't:

• Foil while cooking
• Sauce while cooking
  [*]Use any fancy rubs (just salt)
• Pull my Pork

I will be:

• Using Cherry wood and charcoal
• Cooking in my COS stick-burner
• Drinking and posting way too much during the cook
• Using the trusty cleaver to coarse chop the pork as it should be

Yes I do recognize the irony.

However I still only use our plain sea salt on my pork butts.

I will use the Q-Salt in the sauce I make up though.
