Since you haven't declared Western or Eastern NC BBQ, you are required to do both to please the masses.
It has been decided, it has been declared:
I will be cooking a NC style pork BBQ feast this weekend.
This feast will more than likely include:
- Pork Butt
- Pork Picnic
- (can't readily find whole shoulders here, so this is close enough)
- Slaw
- NC BBQ sauce (dip)
But he did declare...Western (Lexington) style.
The "dip" gave it away...style fully declared.

- Sauce while cooking

I will be:

- Using Cherry wood and charcoal
- Cooking in my COS stick-burner
- Drinking and posting way too much during the cook
- Using the trusty cleaver to coarse chop the pork as it should be
