Finally had a little time to try a new stuffed pork tenderloin recipe. Started with a basic tenderloin.
Then butterflied it and rolled it out flat.
Mixed finely chopped Spanish chorizo, chopped mushroom, sharp cheddar cheese and minced garlic.
Lay on the stuffing, roll it up and hit it with some rub.
Threw it on the Webber with an indirect heat setup for about an hour and fifteen minutes.
Slice it up and it ready to eat.
Let's just say there aren't any left overs!
