Started out with some split breasts that were .98 cents a pound. Eight hour soak with some sea salt and Old Bay. A little more Old Bay and into the fridge for a few hours to dry out the skin.

45 minutes in

Some Datil pepper sauce for a glaze

Off for a rest

Served up with some rice and peas

Brother Hooks, when I read the title; "Split Breasts" my first thought was you had met I girl I use to hang out with. But upon farther review I see that you are talking about chicken. On that note, it looks great to me.
 
IMO, best way to cook breasts is with bone in. :shock: :-DDoes a lot to seal in juices. Those are gorgeous. Some damn good eating for sure! And, almost always cheaper than the skinless/boneless by a good margin. I'd hit those hard!
Out here for me, harder to find. Wish they weren't!
