…and a muffuletta pork loaf.

Low sodium Spam with a solid dusting of Spiceology Tandori Glory smoked on the PK 360 with pecan wood chunks and Fogo lump. Glazed with Thai chili sauce last ten minutes, then fried in vintage CI for crispy spam “burnt ends”. Veggies done on the Blackstone. Served with rice. The tandori rub added a good bit of heat and the chili sauce lent a nice sweet to the heat. I liked it and will do again!

Muffuletta/basil/mozzarella loaf was a happy accident. I attempted to roll a fatty and failed because I too much filling so I forced it all together in loaf form, painted heavily with egg wash and rolled in Italian bread crumbs then wrapped in saran and into fridge to set. Placed in foil pan with drain holes and smoked along with the Spamdori. Tasty!
