I decided to go back to the traditions of my Nonno and make sausizza (Sicilian for sausage).
I ground (single coarse grind), seasoned, and stuffed half of what was left over from my capicola project (other half for kielbasa, in progress). I let the casings dry out a bit in the kitchen before putting in fridge. It was like 12:30 after I cleaned everything up.
Saturday, my old man came over to help with some physical labor stuff I needed to get done, so I cooked up one of the "runts" to test it out for lunch. Grilled great! IT hit 165 but I almost wanted to keep in on longer.
Center cut. I cut them up in little bites and served Dad, Mrs. Snadamo and the kids. All big hits. There was a good snappy bite. I almost wished I added more seasoning to it to give it a bit more flavor, but it certainly was delicious!
BONUS! I saved what I could from the stuffer and horn, and Mrs Snadamo made a meat sauce out of it.....FAN FREAKING TASTIC! One of the best sauces I think she's made (based off my Nonna's recipe she learned first hand from her when we just got married.)
I know there's an Italian throwdown coming up...these will be featured in an entry, but not this one. Stay tuned, I am working on Kielbasa as we speak!
