I thought I'd do something new with Salmon. I nailed each time I smoked it the last years. But it's time to change. So I found an idea of rapping with bacon interesting.

First course though was raw salmon. Rolled in soy sauce and served with spicy mayo:

Then the main course. First dry brine in the fridge four hours.

I lightly fried the bacon (keep it flexible and not crunchy) and made my salmon sauce:
1/2 cup maple
1/4 cup teriyaki
1 TBS paprika
1 TBS garlic powder
1 TBS dried thyme
1 TBS dried oregano
1 tsp cumin
1 tsp dried rosemary
1 tsp ground black pepper
Add a mix of white sesame, black sesame, mustard seeds, cilantro seeds.
Everything ready:

Laid a thick layer on each piece.

Then rolled each piece and rapped with a slice of bacon. Holding it with toothpicks. A butcher's twine will also do. Added another thick layer of sauce on top.

Got the smoker hot. I was aiming for 275f to caramelize the maple but got 300f which is good enough. Dropped a chunk of pecan and put the salmon in for 15 min until it got internal 125f.
