I’m in the process of cooking a 10lb flat, that I’m going to cool and reheat on Saturday. It’s currently wrapped in butcher paper and sitting at 170…

My question is, for those that cook, cool, and reheat…. Should I still cooler rest the brisket after it finishes or just go straight into the ice bath after allowing it to vent for a little while?

I usually cooler rest as long as possible, but don’t know if a rest is needed for this cook.
