The setup...
Inverted vortex with lump plied all around the outside...Chunks of cherry for the smoke...
A foil pan blocks the center to direct airflow to the outside...
And a few lit coals on opposite sides of the V...
The pork...Trimmed, tied, and seasoned...On top of the V ready for indirect cooking...
Temp ran a bit higher than I was hoping for...
And this is the result...
Pork in for a rest and a pan of garlic parmesan taters takes it's place over the V...
When the spuds are done I lose the V and shove all the coals to one side to roast the asparagus...
And plated with some mushroom gravy made with the pork drippings...
