Pork bellies... I knew it!

While contemplating what grub to fire up in celebration of Independence Day early this morning, I figured a quick freezer dive was in order before any plans were made. Much to my delight, I discovered a couple thick t-bones, a rack of beef plate ribs and two pork bellies. Decision made! I grabbed the smaller of the two bellies, gave it a cold water thaw and elected to go with a tried and true favorite. Without further ado, and without much more rambling by yours truly, I'll let the pictures do the talking as the cook unfolds.

Those were 2022 prices for bellies for sure. I bought 210 pounds last week at Costco for $2.49 a pound
