Video 9 – Ranting about hot and fast. And the 275 (AND IN THIS CASE AD NAUSEUM HISTORY LESSON)

NOTE!!!! No. I did not invent Hot and Fast (or hotter and faster) nor taught many Texans - but I AM one of the “internet” pioneers who is internationally responsible for spreading that successful technique and at least “pushing the needle from 225” than more than any other BBQ figure in the Internet BBQ age – Thus – most of the rest of the world. More than Anyone - before anyone. Arguably, more information on how to BBQ brisket has been spread since 2004 than any time before in history.

(Tip 4 by IBCA CHAMPION and Newest Influence - Clarence “Papa” Joseph of Converse Texas)

HERE IS WHERE I MADE MY SECOND MISTAKE - ALWAYS KEEP FLAT SIDE UP FOR COMPETITION – HAD I NOT PUT THE FLAT SIDE DOWN IN THE BRAISE PROCESS I WOULD NOT BE FLIPPING IT BACK UP. BARK WAS GOOD BUT NOT AS GOOD AS IT COULD HAVE BEEN
