Last weekend I had a Dutch BBQ Brethren over for dinner.
I've met him 5 years ago on the Dutch BBQ Brethren Phorum and we had never met in real life.
A Phew years back he posted some pictures when he was in Tokyo.
In one of the pictures there was a Dutch K-1 Phighter that I recognized and I commented on that.
He replied that he was/is a rePheree/oPhicial in K-1 and MMA Phights and showed some more pics.
-amuse smoked shrimps on pickled veggies,krupuk and a squirt of Japanese mayo
-starter smoked shrimp ramen soup
-main course smoked porkbelly with sushi rice,grilled pak soi,grilled tenderstems and smoked pork rib jus
-dessert honey melon sorbet inPhused with dashi,rice vinigar,mirin
Shrimps marinated in some salt and umami herbs.
Veggies were beansprouts,scallion,red onion,lombok pepper...topped off with smoked cashew nuts.
Porkbelly marinated in a mixture of garlic,lombok pepper,ginger,scallion,sesame oil,mirin,rice vinegar,teriyaki sauce.
LePhtover marinade was put together with the rib trimming bouillon/jus to pour over the main dish.
