Nachos!

Craved some simple ground beef nachos yesterday.

Roasted a pasilla chile, jalapeno (forgot at first but roasted it later), onions and garlic (also not in the pic)

Added avocado, Mexican cream, cilantro, lime, oil and salt to the roasted veggies

Into the blender and made avocado crema

Sauteed onions and leftover pasilla chile first

Browned and seasoned the meat then added pinto beans last

Let it simmer and I had my ground beef ready

Served in a huge bowl. Tortilla chips with shredded cheese melted on first, then added the ground beef, tomatoes, avocado chunks, green onions, cilantro, pickled jalapenos, sprinkled more cheese and topped it with the avocado crema

Everyone loved it and I even have lunch for today :clap2:
