just a suggestion. Instead of running it completely dry I would find a lining pan and suspend it above the bottom of your water pan similar to the foil and ball technique for the WSMs. It will avoid cooking all that nasty grease into the bottom of the water pan and making a burned taste in your Q.
 
Nice looking cooker, but I have a word of caution if you want to run it dry, put a barrier between the bottom of the firebox and the grease. If you allow the grease to gather on the bottom of the water pan, and there is no barrier, you'll end up with one heck of a grease fire. I allowed my Backwoods to run dry once (Too many beers), and when I opened the door, instant fire bomb. SCARY! Good luck. Can't wait to see food pron.
