Most of the trimmings were either white hard fat, or silver skin. If I were going to render a batch of tallow soon I might have saved the hard fat for that, but I trimmed off very little of the meat underneath.
Hmm....not sure. They did cook faster than I was expecting given their size, 5-6 hours or so. I wouldnt expect it to make a huge difference, but who knows. I mainly just did it to get some smoke and seasoning on the underside.
I can't find ribs around here. There's no Costco near me and none of the grocery stores have any. I've looked online and prices are outrageous. Is there any source that will ship frozen for reasonable cost?
