Bride, sure but it's Wednesday. Me: Want stacked enchilada casserole? Bride: sure. So it's super simple. As much and type meat as you want, same for tortillas (prefer white corn in this they don't dissolve like yellow), green Chile, other seasoning. Like any casserole you're in control of your scene. This was nine white corn tortillas, layered with the gravy and Tillamook sharp. In the oven until bubbley. Let it cool down. Enjoy

I got rid of my bigger cast iron pots as they were way bigger than I need. I have a two quart Lodge CI and I think a three quart (may be two) enameled cast iron. I use these often. Way more than those oversized ones
