Labor Day bounty (pr0n as we go)

Looks like it all ended up pretty good. You say the flat was a little dry. Was it dry and a little chewy (undercooked) or dry and fell apart when you sliced it (overcooked)?

Dry and a touch chewy. Slices did not fall apart. Must have pulled it too soon. Plus, I only rested it on the counter for about 30 minutes, as la familia was hungry. So I think next time I will start a little earlier in the morning, increase the number of lit from the chimney to get it to 300 and stick, and be darn sure it truly is probe tender.

The point was really fantastic, so I'll probably chop it all up together for good sammiches and potato toppings.
