Cooked this up for the throwdown.....I love kofta kebabs.

This is how is went. Spice mix: garlic, salt, ground coriander, ground cinnamon, grated onion, chopped fresh parsley, ground cumin, cayenne, ground allspice, ground black pepper, ground ginger.

I mixed that up with 3/4 of a pound of ground lamb and 1/4 pound of 80/20 ground beef. The lamb was pretty lean and needed a bit more fat. I portioned these and rolled into meat balls to rest in the fridge for a few hours.

I had to shovel the back to get to the performer.

Then I formed the Kofta around soaked bamboo skewers.

Snow was coming down pretty hard. The grill was clean not 10 minutes before.

Served on Pita over lettuce, tomato and tzatziki and a side of couscous.

Oh my! Blow. my. mind. why don't you!? :hungry:

Did you make your own tzatziki sauce?

I am gonna try this recipe, you made it so easy with your presentation, thanks.

Would love your couscous recipe as well if you willing to share.

Outstanding!!! Kofta in any shape or form rules.

Thanks! I love it!

Yup, the tzatziki is fresh. The key for me is salting the cucumber so it can release most of the water. Then the tzatziki is pretty thick. The couscous is simple. Just carrot and shallot sauteed, then salt, pepper, chicken stock.

I've got to admire you folks shoveling through the snow to get to your smokers! Great cook and pic's!

Thanks. I'm getting tired of all the shoveling tho!

Looks great. I think meat tastes better if cooked while snowing. :-D

Yeah....I'd give that part up in a heartbeat now tho! I want spring!
