Dinner: Stuffed and Smoked Flank Steak

Butterflied a flank steak

Covered with cream cheese & house/made garlic scape/basil pesto and feta cheese.

Added baby spinach, more feta and dried cranberries.

Rolled and tied, then seasoned it all up with Q-Salt

Smoked it with cherry wood in the Shirley Patio Smoker.

Since the smoker was still hot, I halved some peaches, seasoned with Gingery Orange Sea Salt, drizzled them with local honey and tossed them on the smoker.

Whoa. That is awesome.

I was intrigued by the title, as I see flank steak and envision nothing but fajitas.

Perhaps I need to expand my flank steak horizons.
