Ice Box Pickles

Last weekend I had the opportunity to make up a few jars of
Ice Box Pickles and Pickled Eggs...This recipe is so easy and the end product is so good.....

Ice Box Pickles
Makes 2 Quarts
1 Jar Pearl Onions, 12 oz.
8-12 Medium Sized Cucumbers. Peeled and Sliced into 1/4” thick rounds
2 cups Sugar
2 cups Apple Cider Vinegar
1/4 cup Salt
1 Tablespoon Celery Seed
1 Tablespoon Mustard Seed
1 Tablespoon Turmeric
Optional Addition
12 Jalapenos Sliced into 1/4” rounds

Divide the veggies equally between two quart mason jars.
Pour the vinegar into a microwave safe mixing bowl.
Add the dry ingredients to bowl and stir to combine.
Place bowl into Microwave and heat using 1/2 power for 2 minutes.
Stir the bowl again and let cool for 10 minutes.
Divide the vinegar mixture equally between the mason jars.
Seal and place into Fridge for one week….

I did the eggs with this recipe sans the cukes...
They need to mellow in the Fridge for one month...

I opened a jar of the pickles yesterday and sampled the cukes...
Delightful!!! On to the Pearl Onions, again, Delightful...
Then it was time for a Jalapeno...See that little red guy up in the top of the jar? That's the one I went for.....:becky:

For a second or two, as I was chewing, I was thinking,"Man, that's mighty nice!!"

Then it started to build in heat intensity....It took a hold of me and would not let me go....The more I chewed and tried to swallow the hotter it became...:shock:

Sweat poured down off my forehead...:shock:

I started hiccuping, heat increasing with every hic...:shock:

My eyes began watering....:shock:

My nose began running....:shock:

I couldn't catch my breath.....:shock:

I felt intense pain in my chest....:shock:

I started drinking iced tea to relieve the fire....no help...:shock:

I ran to the Fridge and grabbed a quart of sweet milk....I drank the entire carton.....My face felt like someone had jack slapped me......My tongue
was throbbing....my throat was raw....:shock:

Eventually I caught my breath and after thirty minutes was pretty much back to normal.......

That was without a doubt the hottest Jalapeno I have ever ate.....:mad2:






Going back for another taste after I get some milk from the store.....:thumb:
 
Sounds great! How long can you keep them after making them?

The world may never know. :p We recently started making these and I suspect yours too will get eaten up long before you begin to think they've gone bad.

The truth is that they can last darn near forever because they are pickled.
 
Ok maybe a stupid question but here it goes.....the eggs are hardboiled and shells removed, correct?
 
next time the burn is too much try a spoonful of sugar, work as good as milk.
 
Nothing special other than mason jars? No need to boil the hard and use special apparatus to seal jars?

I just hand wash the jars and lids and let dry in the drainer
before use. Straight into Fridge after filled.
 
Tanks lots n8!!!been lookin for a good small batch pickle recipe fer a minit now! Only had enough fir one jar (pickles that is) and i didn't have mustard seed, so I used ground mustard seed, and didn't have any canned pearl onions, so figured a lil water would work, I guess well see in a few weeks eh?

I got into my first jar after a week's wait....Mighty Tasty....
Those are about gone so I'm going into the second jar
probably this weekend...
Interested to see how, if any, difference there might be by
letting them go longer.....
I imagine the longer they age the better they'll be....
