Did the event yesterday, used the buckets and liners for the collards and beans - two 5 gal. buckets each. They worked fantastically and the food stayed hot for hours. This is a great way to go and thanks for the info y'all - it was very helpful.

I had the gamma seal lids for a few of the buckets and that is the way to go - the lids just screw off rather than having to fool with prying off the lids that come stock with the buckets - I had the bucket lid wrench thingee and it was still kind of a PITA - it's much easier with the screw off lids.
