This is my second one. I good friend taught me to smoke all kinds of stuff and I pretty much follow his recipes with a twist of my own as time passes by. He has moved to a propane burner with wood chips but I just love managing the fire and what it produces
 
I got a few requests for the brine recipe and where to get the netting

This is the basic brine recipe that was passed on to me. I did add some onion powder and sometimes peppers for a kick

Per TurkeySalt4.33OunceWater3.33Quart Granulated Garlic0.29TeaspoonBrown Sugar0.42LbsTender Quick2TeaspoonLiquid Smoke0.125Teaspoon


The basic injector work fine for years but now I use the BDI injector and yes it It is the best damn injector I have used.

This is the netting. I use size 28 for the turkeys and they are a tight fit to get on. I used the 6" on the chickens

Awesome! Chicken is probably my favorite thing to smoke. Delicious, cheap, and I can make it easily in a few hours. Maybe with a fatty or something else that cooks up quick also.

Thanks - It sure is easier than turkeys and tastes pretty darn good. I am hoping MSD will make some smoked chicken noodle soup!
