Looks Excellent! I often get some weird looks as I do the floppy test when buying brisket at Costco.

Yes I have a refrigerator that basically only gets opened on the weekends for beer drinking. I leave them in there for 30-45 days depending if I know the processing date. Seems to help quite a bit in my opinion. Oh and thanks.
 
I know Franklin's. Franklin is no friend of mine. I sir am no Franklin! :mrgreen:
