My Walmart brisket slot empty this morning. Got yellow tag bones and ground sirloin. Good job
 
Been cooking those a lot this year. Mostly because I bought them at $1.67/LB. How do you like the injection?
 
I've done those Walmart briskets. There is no USDA rating so figure it falls under "standard." Good price but 35% trimmings add up. I haven't been too impressed when done on my cheap Komodo but could blame the cook. They get cooked tender but just not as flavorful as I recall from other cooking sessions with a "select" cut.

Been thinking about doing buffalo as we have locally raised source but concerned about it being even more lean.

I have never tried a brisket below select. All the ones I get from Walmart are select or choice.
 
8 1/2 Hrs and Finally probed Tender at 202*. Resting in Pan in Oven. Will Slice in about 1 hr. I dunno on this one. All the Walmart briskets Ive had before were marked Select with an ocassional Choice but not this one and this cook wasn't like usual.......Well see in 1-1.5 hrs. This one may Suck.......... :shock:
