Tell me about your temp and humidity controls. I just bought a used wine fridge and may need to add humidity control at least.
 
The first of the bunch finished at 68% of starting weight in about 5 weeks. We had the first sample last night, it came out great! Pretty happy with it. No problems with the exterior hardening / drying out too fast, just consistent texture all the way through.











 
Nice! Seems like a fast dry, but it looks good from here!

I gotta figure out my damn netting sizes because I am pretty sure I bought ones that were too small.
