Smoking a smaller loin on low for several hours then going to drop it on a dollop of beef tallow, wrap in pink butcher paper and into the slow cooker low overnight. The plan is to make BBQ sliders with sauce, pickles, onions and slaw. If that don't work out, green chile Stew or something. Bottom line not overly worried about it drying out. Deep scored and seasoned and into pellet cooker for a smoke bath.
